I’ve been in a food rut lately and desperately needed to try something new. There were caveats though. Since I haven’t been to the grocery store this week, the recipe had to be made with ingredients in my pantry and it had to be easy. It sounded like it was time to drag out the crockpot! After flipping through my cookbooks, I landed on the perfect recipe to try – I had everything but the pecans!

The Como Park Conservatory has always been one of my favorite places in the city. In fact, not only did I insist on dragging my family there to take my senior prom photos, but I was also married there. A lush and fragrant setting, the gardens create a tropical paradise regardless of the weather outside.

Did you know that Minnesota is home to The Jolly Green Giant? When I started researching this, I hadn’t realized that there was a 55-foot tall fiberglass statue in Blue Earth, MN. I was aware of the enormous wooden sign of the Giant (with Sprout!) on Route 169 near Le Sueur, however. The few times we drove by when I was a kid, I remember waving at the sign enthusiastically and being amazed by its size. Imagine my disappointment to read on Wikipedia that this sign is a source of minor controversy because it “frequently startles motorists.” I’m going to let you in on a little secret. He’s not a real giant, people.
It’s not every day that I find someone who will eat raw, vegan food with me, so my recent lunch date with The Best-Good Friend was a really big treat! We eagerly pointed the car towards the Ecopolitan‘s 100% Organic Vegan Raw restaurant.
One of the things I love about the local eateries in Minneapolis is that they often have a story, and usually they are stories I didn’t know.
Cafe Maude in southwest Minneapolis, for example, was named after Maude Armatage, a woman basically forgotten to history. Enticed to do a little Googling, I learned that Maude was considered a driving force in helping Minneapolis come of age in the 20th century. Born in 1870 to a family whose farm is now the entire Armatage neighborhood in Minneapolis, her grandparents founded Harmony, which later became the city of Richfield. When she first married, she moved to South Minneapolis – an area that was considered the wilderness at that time.
A snowy winter afternoon can be transformed by a leisurely lunch, especially when it is at Broders’ Deli, the Cucina Italiana.
The neighborhood deli in Minneapolis features fresh pasta, sauces, baked goods, Italian groceries and pastries, deli items and so much more – all of the food is available for carryout. The Husband and I ate our lunch in their small dining area and enjoyed every bite.
